An iconic bagel shop in Newton Centre, winner of countless awards, Rosenfeld’s decided to upgrade their rotary oven to increase efficiency. BSC worked closely with the owners and numerous trades to coordinate the removal and installation of the new Reed oven with minimal disruptions to their operation. Not only did they cut down on their overall production time, the oven is also baking a more uniform product regardless of placement in the oven. Recently, they produced 900 dozen bagels in 12 hours compared to 600 dozen in 18 hours before the replacement. If you have never had one of their bagels, you are missing out!
