Middle Eastern cuisine is taking the restaurant world by storm and anoush'ella, a new fast casual restaurant in the South End, is a force to be reckoned with. Account Executive Jeff Sullivan collaborated with VP of Engineering Gary Strickland to layout and specify equipment. The workhorse of their operation in the basement is the Rational combi oven, which prepares a large portion of the food in advance of service. Upstairs where patrons order and eat, a custom Delfield serving and cooking line dominates the space along with a stunning tap system for dispensing beverages along the bar counter.
