Commercial Steamer Cleaning and Maintenance
Steamers are a large investment in your commercial foodservice operation. Steam cooking is one of the healthiest and expedient methods, particularly when feeding hundreds or thousands of people daily. Because steamers are constantly exposed to water, preventative maintenance, some of which is daily, is vital to prolonging the life of the unit and avoiding costly repairs. Below you will find cleaning and maintenance information on popular commercial steamer models that is provided by the manufacturers.

ClevEland Steamchef Steamers
This procedure should be performed at the end of each day or shift, or more frequently if the water supply does not meet the Minimum Water Quality Requirements in the Warranty.
Turn the ON/OFF switch to OFF to de-energize all controls and drain the steamer. The appliance will begin a 3- minute drain rinse cycle to clean the drain system.
Open the cooking compartment door and allow steamer to cool and remove any spilled food from the surface of the KleanShield. Never push food scraps down the KleanShield opening or the reservoir drain opening.
Remove the slide racks, fan guard and KleanShield. Wash and rinse slide racks, fan guard and KleanShieldTM separately or clean them in a dishwasher.
Remove any spilled food from inside compartment and clear any residue from the drain valve and the KleanShield drain opening. Do not push food debris or scale down the steamer drain, or through the KleanShield drain. 5
Clean the interior of the compartment thoroughly, removing all food particles and scale from the steamer.
Wipe down the interior of the cooking compartment with a half water and half white household vinegar solution. Use a spray bottle of the same vinegar solution to rinse the convection fan located at the back of the cooking compartment. When done daily, this will help prevent the buildup of calcium and other mineral deposits left over from the boiling of water, and prevent scale buildup in the steamer. Detergents are not recommended by Cleveland Range.
Use a soft bristle brush to clean the water sensor, temperature probe, and fan to remove stubborn food particles.
Rinse the inside of steamer compartment and drain valve thoroughly with clean water and inspect the probe assembly and clean it with a soft bristle brush or similar non-abrasive cleaning means.
Clean the door assembly including the gaskets. Remove the gasket and rotate periodically as well.
Replace the cleaned KleanShieldTM, slide racks and fan guard and wipe the exterior with a damp cloth only.
After cleaning, leave the steamer door open until the next steamer operation. This prevents compartment odor buildup and helps increase gasket life.
*Daily cleaning may reduce the need to descale the unit. Refer to the owner’s manual for descaling procedure.

Daily Cleaning
Avoid any harsh or toxic chemical cleansers, as the residue could potentially affect your food. Gentle soap and water is enough.
Wash the inside of the machine with a cloth, focusing on cleaning out any leftover debris.
Pay attention to "touch points": the door, latches, and control knobs operators directly contact.
Change filters regularly to lower lime buildup.
De-scaling
Set a schedule for cleaning and de-liming your commercial steamer. De-liming frequency depends on the composition of the water you're using, so check the steam cavity regularly and de-lime when scale build-up is noticeable.
Vulcan recommends commercial deliming solution; usually about 14 ounces mixed with 2 gallons of warm water.
Spray cavity walls with solution and pour remaining solution in the cavity well.
Turn the steamer on and set timer for 5 minutes. Turn the steamer off after the 5 minutes are up.
Let the deliming solution soak for at least 30 minutes, but no more than an hour. If scale buildup is still present, repeat the previous steps.
Drain the steamer and thoroughly rinse with clean, warm water.
Dry with a clean cloth.
Leave the steamer door open when not in use.

Drain out water and then add clean water plus 1 cup of white vinegar to the cooking compartment. Start the steamer in the Cook Mode for 15 minutes. The cooking compartment will automatically fill with water if unit is connected. If the steamer does not have the automatic water fill option, manually add water (about 2.5 gallons) up to the water fill line. Shut the door.
After 15 minutes, turn Evolution off. Allow the cooking compartment to cool completely (140° or cooler) and then drain out the water and vinegar mixture.
Once cavity has cooled, remove pan racks and steam collector plate (bottom cover with handle). Then remove the steam distributor panel by unscrewing the four nuts by hand on the inside right wall. Wash all pieces by hand or run through the dishwasher.
Scrub the two water sensors (located in left inside of cavity) and the entire inside of cooking chamber with a non-metallic scratch pad. If connected unit, take the float ball of the stem and thoroughly scrub it and the stem. Put the float back on the stem. NOTE: If float ball is not put back, steamer will not turn on.
Rinse interior of steamer with clean water. Once cavity is filled with clean water, drain it out.
Reinstall the steam collector plate first. This goes in the bottom of the unit. Next, place the steam distributor panel on the lip of the plate to easily match it up to the right side of the unit. Screw in all four nuts hand tight. Lastly, reinstall pan racks.
The final step is to wipe down the cavity with a dry cloth. Then fold back the flap of the door gasket and wipe away any debris. Dry entire cavity and inside of door. Leave the door open overnight to allow everything to dry completely. to help lengthen the life of the gasket.

Daily
Let the steamer cool.
Empty the water into the drain pan and discard it.
Dry the cooking chamber, including the low-water sensors, with a cloth.
Leave the door open overnight to let the chamber air dry.
Weekly
Mix 1 cup of white vinegar with two gallons of clean water.
Fill the chamber with the mixture and let the machine operate for 30 minutes at maximum temperature.
Let the mixture cool, then empty it into a drain pan.
Using clean water, rinse thoroughly, then drain.
As before, dry with a clean cloth.
Let the unit air dry with the door open overnight.
